German Apple Cake

Happy Mother's Day to all the Moms!  I know, Mother's Day was yesterday, but I'm choosing to celebrate all week long!  Yes, I'm a little cheeky sometimes :-)  In honour of Mother's Day, I asked the two wonderful Mom's that I am so lucky to have in my life to share with me their favourite recipe.  Today I am sharing my Mom's recipe for German Apple Cake, and on Thursday when you come back you will see my Mother-in-Law's recipe for Hint of Thai Sirloin with Mango Pepper Salad

Here is my Mom's recipe: 

German Apple Cake (source: my Mom’s recipe binder)
Classic comfort food, a tradition in our family!
Cake
1 ½ cups flour
¾ cup sugar
½ cup butter
2 eggs
1 teaspoon baking powder
¾ cup milk
½ teaspoon vanilla
Topping #1
Apples (about 3-4, peeled and sliced)

Topping #2
1 cup butter
1 cup flour
1 cup sugar (white)

Topping #3
1 ½ tablespoons sugar
1 ½ tablespoons cinnamon

Preheat oven to 350.

Make the cake batter by mixing the butter, eggs, milk and vanilla.  Add in the dry ingredients (flour, sugar, and baking powder), blend, and pour into a greased 9 x 13 baking dish (I use glass for this cake).
Place the sliced apples (Topping #1) on top of the batter.  Slice more apples if needed to cover the cake. 

In a small bowl, combine the ingredients for Topping #2 (butter, flour and sugar) and spread on top of the apples.  This topping will be very crumbly. 

In a small bowl, combine the ingredients for Topping # 3 (sugar and cinnamon).  Sprinkle on top of the crumbly mixture.

Bake at 350 for 40 minutes.  Cool before serving, though this cake is delicious when served warm (and with a heavy cream!)

VERDICT:
I grew up with this cake…so I am a little biased – this is like a comfort food for me, I love this cake!  As a teen, I would sneak pieces for breakfast (healthy, I know!).  It is SO not low-cal…but that’s OK, it’s DESSERT!  My oldest son LOVED it and has already asked me to make it again.  My husband, the non-dessert guy, also enjoyed the cake and he was sneaking pieces of it too for the short time it lasted in our house.  Thanks Mom for sharing!

  4. I love it... celebrating Mother's Day all week long. My teenaged daughter frequently grabs something not so healthy for breakfast as she is running out the door, to the dismay of her Mom!   45. I am new to this blog, found it on Gooseberry Patch. I have a question, the #2 topping, gave me trouble, but I had left the butter get soft, so it made a very heavy sticky batter. I threw that away and tried it with butter right out of the refrigerator and had trouble trying to get the butter lumps to crumble. The cake is in the oven and I am hoping it will turn out okay, because it sounds and looks delicious. Do you have any suggestions on how to make the crumbly mixture. I have made this mixture before for on top of pies, but than you are not using as much butter. I would appreciate if you could help me, with this. Sue M.

    1. Hi Sue! Thanks so much for your message. I sure hope that the cake turned out for you. I typically let the butter soften a bit but not get too soft. When the butter, flour and sugar mix together it gets crumbly and I then sprinkle/spoon it over the apples. I don't worry about it being too even (or if there are larger clumps of butter) because the butter melts when you bake, so it all spreads out. Please let me know how it turned out. We've been making German Apple Cake for years, it's a long-time family favourite. In fact, I might have to make one this weekend with all the fresh apples :-)

  58. I made this cake and the flour-sugar-butter topping was not crumbly like you described it to be. It was a frosting consistency. I pulled the cake out of the oven and it was very oily-buttery. I would suggest only a half cup of butter with the flour and sugar. Did I do something wrong?

    1. Hi Jess! I'm not sure - perhaps it's an altitude thing? I've never had it come out oily. Maybe give it a try with less butter - let me know how it turns out. If anyone else has any ideas, I would love to hear them!

    2. Mine came out liquidy this time, but I used liquid margerine instead of butter this time, because we didn't have a stick of butter. So maybe that's the problem? I'll keep mine in the oven until I feel like it's done.

  61. Thank you so much for this post, even though it's a couple years old now.
    I made this for my mom and me a week or so ago, because we wanted an apple cake, not a pie, but we still wanted it to be really crispy on the top and mushy inside. When we made it, it lasted for several days without going dry!
    Another thing we did was part the cake in two parts. I love banana cake, but my mom hates it, and I thought the batter seemed very "basic", so I placed apples on one side and bananas on the other (and left out the cinnamon on the banana-side) and it was SO delicious! So for any one out there, this is a great recipe for a banana cake, too!
    I'm making again today for afternoon coffee!
